Mexican Chicken Roll-Ups - cooking recipe
Ingredients

3 to 12 chicken breasts, skinless and boneless
whole green chilies, enough for 1/2 pepper for each chicken breast
8 oz. Monterey Jack cheese, sliced or grated
fresh cilantro (if available, can also use dried)
1/2 c. flour
2 Tbsp. to 1/2 pkg. taco seasoning mix
1 to 2 eggs, beaten
1/2 c. cornmeal
Preparation

Pound chicken breasts out flat.
In middle, put 1/2 to 1 whole green chile on chicken breast.
Cover pepper with cheese and 1/8 to 1/4 teaspoon cilantro.
Roll up and secure with toothpick.
