Veggie Wraps - cooking recipe
Ingredients

1 pkg. wraps
2 large onions sliced
1 red pepper sliced
1 green pepper sliced
2 large carrots cut in matchstick size pieces
1 zucchini cut in matchstick size pieces
1 yellow squash cut in matchstick size pieces
1 c. broccoli florets
1 c. cauliflower florets
1 c. black beans drained and rinsed
1/2 c. frozen corn
2 tsp. chili powder
2 tsp. ground cumin
salt and pepper to taste
sour cream
Preparation
-
Saute all veggies in 2 tablespoons olive oil till tender crisp.
Sprinkle with seasonings.
Add corn and black beans. Place veggies on warm wrappers with sour cream.
Roll up.
