Ambrosia Mold - cooking recipe

Ingredients
    1 (8 oz.) can crushed pineapple (undrained)
    2 c. boiling water
    1 large pkg. Jell-O (orange, sugar-free)
    1 3/4 c. thawed Cool Whip
    1 can mandarin oranges, drained
    1 c. miniature marshmallows
    1/2 c. flaked coconut (optional)
Preparation
    Drain pineapple, reserving juice.
    Add enough water to measure 1 cup.
    Stir boiling water into Jell-O in large bowl until dissolved.
    Stir in measured liquid.
    Refrigerate about 1 1/2 hours until slightly thickened.
    Stir in whipped topping with wire whisk until smooth.
    Refrigerate 10 minutes until mixture will mound. Stir in pineapple, oranges, marshmallows and coconut.
    Spoon into 6 cup mold.
    Makes 8 to 10 servings.
