Pickle Meat - cooking recipe

Ingredients
    1 gal. salt
    5 lb. brown sugar
    2 oz. cayenne pepper
    2 oz. black pepper
Preparation
    Mix together for 100 pounds to 120 pounds of meat.
    Cut meat into squares.
    Rub mixture all over meat.
    Pack in stone jar. Put a weight on top.
    Brine will cover meat.
    Let set about 2 or 3 weeks. When ready to eat, slice and roll in flour and fry as chicken.
