Ingredients

4 slices bacon
2 c. shredded, cooked potatoes
1/4 c. chopped onions
1/4 c. green pepper
4 eggs (one per person)
1/4 c. milk
1/2 tsp. salt
dash of pepper
1 c. shredded cheese
Preparation

Fry bacon until crisp.
Remove from pan.
Mix potatoes in pan and cook until underside is brown.
Mix other ingredients together.
Pour over potatoes.
Top with cheese and bacon. Cook over low heat. This works well in an electric skillet.
