Creamy Pumpkin-Ricotta Pie - cooking recipe

2 eggs
1 c. Lamagna cheese
1 (16 oz.) can solid pack pumpkin
3/4 c. light brown sugar
1/2 tsp. salt
1 1/2 tsp. pumpkin pie spice
1 tsp. vanilla
1 small can evaporated milk
9-inch pastry shell, unbaked
Preparation

Preheat oven to 375\u00b0.
Beat eggs lightly in a large bowl; add Ricotta cheese and beat until smooth.
Stir in remaining ingredients until well blended; then pour into pastry shell.
Bake for 45 minutes.
Cool completely on wire rack.
Just before serving, garnish with yogurt and pumpkin seed (optional).
