Near-Cast White Bean Soup - cooking recipe

Ingredients
    2 c. dried white beans
    6 c. water
    1 onion
    1 clove garlic
    2 Tbsp. olive oil
    1 can tomatoes
    1/2 tsp. thyme or marjoram
    carrots
    celery
    potatoes
Preparation
    Cover beans with water and bring to boil.
    Boil for 2 minutes. Cover and simmer for 1 hour.
    Saute onion and garlic in oil for 5 minutes.
    Add to beans with other ingredients.
    Cook, covered, until beans are tender.
    Mash beans slightly and serve.
    Makes about 1 1/2-quarts.
