Baked Mexican Rice - cooking recipe

Ingredients
    1 onion, finely chopped
    1 clove garlic, chopped
    1/3 c. olive oil
    1 c. rice
    1 tsp. salt
    1 tsp. freshly ground black pepper
    2 Tbsp. chili powder
    1 (4 oz.) can drained button mushrooms
    10 to 12 slices chorizo
    1 1/2 c. beef or chicken stock, boiling
    Parmesan or Longhorn cheese, grated
Preparation
    In heavy casserole, saute onion and garlic in olive oil (or spray casserole with Pam) until just soft. Add rice, salt, pepper and chili powder.
    Brown slightly. Add mushrooms, chorizo and boiling stock (enough to come 1-inch above rice). Cover with a tight lid and bake at 350\u00b0 for 30 to 35 minutes or until liquid is completely absorbed.
    Sprinkle with cheese.
    Serves 4.
