Mary'S Cornbread Veggie Pie - cooking recipe
Ingredients

1 (10 oz.) pkg. frozen veggies, chopped
8 oz. shredded Cheddar or a mixture of cheeses
1 large egg + 1/4 c. Egg Beaters or 2 egg whites
1 (8 1/2 oz.) pkg. corn muffin mix
1/4 tsp. onion powder
1 1/2 c. milk (dry or low-fat)
1/4 c. Parmesan cheese
Preparation

Cook and drain veggies.
Press evenly in bottom of a 10-inch quiche pan.
Sprinkle with cheese.
Mix remaining ingredients except for Parmesan cheese.
Beat until well combined.
Pour into quiche dish.
Sprinkle with Parmesan.
Bake at 350\u00b0 until knife tests done, 30 minutes.
