Golden Fish Fillets - cooking recipe

Ingredients
    1 egg
    2 Tbsp. prepared mustard
    1/2 tsp. salt
    1 1/2 to 2 lb. white fleshed fish fillets
    instant mashed potato flakes to coat
    vegetable oil
Preparation
    Lightly beat together egg, mustard and salt in a shallow baking dish.
    Put the potato flakes in another shallow baking dish.
    Dip the fish fillets in egg mixture.
    Then roll in potato flakes to coat.
    Heat oil in a large skillet, fry fillets for 3 to 4 minutes on each side, until they are golden brown and flake easily with a fork.
    Makes 4 servings.
