Sweet And Sour Cucumber Salad(Diabetic: Low-Fat) - cooking recipe

Ingredients
    1/2 c. water
    1 c. cider vinegar
    non-nutritive sweetener (equivalent to 2 Tbsp. sugar)
    2 Tbsp. dill pickle, chopped fine
    1 1/2 tsp. salt
    2 cucumbers, sliced thin
    1 stalk celery, sliced thin
Preparation
    Boil water, vinegar, sweetener, pickle and salt.
    Place cucumbers and celery slices in a glass jar.
    Pour boiling liquid over. Cover and refrigerate overnight. Drain before serving. Yields 2 cups.
    Contains 20 calories per serving.
