Enchilada Casserole - cooking recipe
Ingredients

1 lb. ground beef
1 c. chopped onions
1 clove garlic, minced
1 (14 1/2 oz.) can tomatoes, undrained and crushed
1 (4 oz.) can diced green chilies or 1 small green pepper, chopped
1 (2 1/4 oz.) can sliced ripe black olives, drained
1 Tbsp. chili powder
1 1/2 tsp. ground cumin
2 c. shredded Cheddar cheese
2 c. smashed Fritos corn chips or 2 c. smashed tortilla chips
Preparation

Brown meat with onions and garlic until vegetables are tender. Stir in next 5 ingredients.
Bring to a boil, then simmer 10 minutes. Stir occasionally. In a 2-quart casserole, layer 1/2 meat, 1 cup cheese and 1 cup chips.
Top with last 1/2 meat and chips. Bake at 350\u00b0 for 30 minutes. Top with remaining cheese and bake 5 minutes more.
Makes 4 servings.
