Apple And Oat Bran Muffins - cooking recipe

1 1/4 c. whole wheat flour
1/3 c. packed brown sugar
1/4 tsp. baking soda
1/2 tsp. ground nutmeg
1 c. buttermilk
2 Tbsp. cooking oil
1 c. oat bran
2 1/2 tsp. baking powder
1/4 tsp. salt
3/4 tsp. ground cinnamon
2 egg whites
3/4 c. shredded, peeled apples
nonstick spray coating
Preparation

In a medium bowl, stir together flour, oat bran, brown sugar, baking powder, baking soda, salt, nutmeg and cinnamon. Set aside. In a small bowl, combine buttermilk, egg whites and oil.
Add to dry ingredients. Stir just until moistened. Stir in shredded apples.
Store batter, tightly covered, in the refrigerator for up to 5 days.
