Crunchy Chicken Bake - cooking recipe

Ingredients
    1/4 c. margarine
    3 lb. cut-up chicken
    1 egg, beaten
    2 Tbsp. milk
    1 c. instant mashed potato flakes
    1/2 c. Parmesan cheese
    1/2 tsp. salt
    1/2 tsp. pepper
Preparation
    Melt margarine in flat baking dish.
    Combine egg and milk. Set aside.
    Mix potato flakes, cheese, salt and pepper together. Dip chicken first in egg and milk mixture, then roll in potato flake mixture and coat well.
    Place chicken in baking dish. Reserve left over potato mixture.
    Bake chicken 30 minutes at 400\u00b0 uncovered.
    Turn chicken and sprinkle with reserved potato flakes mixture.
    Bake 30 minutes more or until tender.
