Florida Celery And Eggplant Croquettes - cooking recipe

Ingredients
    3 c. diced celery
    1 large eggplant, peeled
    1 medium onion
    3/4 tsp. salt
    1/8 tsp. pepper
    4 c. soft bread crumbs
    2 eggs, slightly beaten
    dry bread crumbs
Preparation
    Dice eggplant and onion.
    Combine eggplant and onion with celery, salt and pepper.
    Bring 1-inch water to a boil in a medium saucepan.
    Add vegetables and cook, uncovered, 5 minutes.
    Drain off water.
