Ingredients

1 zucchini, unpeeled and diced (medium size)
1 egg
1 Tbsp. chives
1 to 2 c. pancake mix
1 Tbsp. parsley
1/4 tsp. salt
Preparation

In blender, add pieces of zucchini to the egg until all mixed. Add spices and pancake mix until mixture sufficiently thickened for pancake batter.
Drop spoonfuls into hot oil 1-inch deep in frying pan.
Turn once when brown.
Good to eat with syrup.
