Ingredients

1 lb. beef, cut into pieces
1 large onion
2 carrots
1/2 c. lemon juice
1/4 tsp. pepper
1/4 tsp. paprika
1/4 tsp. basil
1/4 tsp. tarragon
1/2 c. fresh parsley, chopped
2 stalks celery
Preparation

Wash beef and in deep pot cover with water.
Add remaining ingredients.
Cover and bring to boil.
Lower heat and simmer for 2 hours.
Strain, reserving beef and vegetables.
Stock may be used in place of oil to saute meat, vegetables, etc.
If stock is to be used as soup, blend vegetables and stock in blender for 30 seconds.
May be frozen.
Serving size 1 cup.
