Rainbow Pasta Dinner - cooking recipe
Ingredients

1 (8 oz.) pkg. rainbow spirals or curlies
1/3 c. chopped red bell pepper (1/2 small)
4 carrots, peeled and shredded
1 c. frozen peas, partially thawed
2 scallions, chopped
1 celery rib, chopped
1 c. diced cooked chicken, turkey or ham
1/2 to 3/4 c. Italian dressing
1/2 tsp. salt
1/4 tsp. pepper
6 c. shredded lettuce
Preparation

In a large pot of boiling salted water, cook pasta until just tender, 8 to 10 minutes.
Drain, then rinse with cold water and drain again.
Transfer to a large bowl.
Add all remaining ingredients except lettuce to pasta.
Toss to blend well.
Serve at room temperature or chilled on a bed of shredded lettuce.
