Cheddar Cheese Soup - cooking recipe

Ingredients
    4 Tbsp. butter
    2 Tbsp. flour
    4 c. rich chicken broth
    1 c. diced sharp Cheddar cheese
    1/2 c. each: chopped onion, carrots and celery
    1/4 tsp. white pepper (or to taste)
    dash of Worcestershire sauce
    1 c. light cream
Preparation
    Melt 2 tablespoons butter in saucepan; stir in flour until lightly brown.
    Gradually add broth.
    Blend in cheese and stir until melted.
    Saute vegetables in remaining butter until translucent; cool slightly and puree in processor or blender. Soup may be made ahead to this point.
    At serving time combine cheese mixture with puree and heat gently.
    Add cream and seasonings; continue to heat gently and adjust seasoning.
    Serves 4 to 6.
