Tabouli Salad - cooking recipe

Ingredients
    1/2 c. fine bulgar
    Juice of two lemons
    1 bunch scallions, chopped
    1 bunch mint chopped
    2 bunches parsley chopped
    1 each, green, yellow, red pepper chopped
    4-6 tomatoes chopped
    1 tsp. salt (kosher preferred)
    1 tsp. black pepper
    1/4 c. olive oil
Preparation
    Soak bulgar in the lemon juice. Set aside. Prepare chopped ingredients. Add to bulgar when lemon juice has been absorbed. Mix all together, add salt and pepper and add olive oil last. Adjust seasoning.
    This is a nice vegetarian salad served with pita bread.
