Squash Casserole With Stuffing - cooking recipe

Ingredients
    1 (6 oz.) bag seasoned stuffing mix
    5 c. sliced squash (yellow or zucchini)
    1 medium carrot, sliced thin
    1 can cream of chicken soup
    1/2 c. sour cream
    1 Tbsp. minced onion
    1/4 tsp. black pepper
Preparation
    Preheat oven to 350\u00b0. Prepare stuffing mix according to directions, except reduce water to 1/4 cup. Spread half of stuffing in a 2-quart baking dish. In a large saucepan, cook squash and carrot in a small amount of water 8 to 10 minutes, until tender. Drain well. Stir in soup, sour cream, onion and 1/4 teaspoon black pepper. Spoon mixture over stuffing; top with remaining stuffing. Bake 35 to 40 minutes, until thoroughly heated.
