Smoked Sausage Rice Skillet - cooking recipe

Ingredients
    1/2 c. sliced carrots
    1 medium zucchini, cut lengthwise into halves and sliced
    1 Tbsp. margarine or butter
    1 (8 oz.) can stewed tomatoes (undrained)
    1 (2 1/2 oz.) jar sliced mushrooms, drained
    1 c. water
    1/4 tsp. dried basil leaves
    1/4 tsp. dried thyme leaves
    16 oz. Eckrich smoked sausage, cut into pieces
    1 1/2 c. uncooked instant rice
Preparation
    Saute carrots and zucchini in margarine in 10-inch skillet over medium heat for 3 minutes.
    Add tomatoes with juice, mushrooms, water, basil, thyme and sausage.
    Bring to a boil. Reduce heat to low, cover and simmer 6 minutes.
    Stir in rice. Cover; remove from heat and let stand for 8 minutes, stirring after 4 minutes.
    Makes 5 servings.
