Stuffed Zucchini Boats(Yield: 6 Servings) - cooking recipe

Ingredients
    1 1/2 lb. small zucchini
    3/4 c. grated Cheddar cheese, divided
    1 1/2 c. fresh bread crumbs
    1/4 c. minced onion
    2 Tbsp. parsley
    1 1/4 tsp. salt
    1/8 tsp. pepper
    2 eggs, beaten
    2 Tbsp. butter
Preparation
    Boil zucchini until tender; cut in half lengthwise.
    Scoop out zucchini and reserve shells.
    Add 1/2 cup cheese and next 6 ingredients.
    Stuff shells with mixture.
    Dot with butter and 1/4 cup cheese.
    Bake, uncovered, for 30 minutes.
