Chicken Broth With Enoki Mushrooms - cooking recipe
Ingredients

5 c. chicken stock
1 c. diced chicken (optional)
2 Tbsp. chopped fresh ginger
1/3 c. thinly sliced green onion
2 oz. Enoki mushrooms
2 to 4 Tbsp. fresh lime juice
2 Tbsp. fresh grated lime peel
2 Tbsp. minced fresh coriander (cilantro)
salt and freshly ground or white pepper
Preparation

Bring stock, chicken (if desired) and ginger to a boil in medium saucepan.
Reduce heat; cover and simmer 10 minutes. Strain through fine sieve and return to pan.
Add remaining ingredients.
Simmer 5 minutes.
Season with salt and pepper. Garnish with coriander and serve.
