Cuban Chicken - cooking recipe

Ingredients
    1 (3 to 3 1/2 lb.) fryer, cut up
    2 Tbsp. salad oil
    2 cloves garlic, chopped
    1 large onion, chopped
    1 large green pepper, chopped
    1 (15 oz.) can tomato sauce or chopped tomatoes
    4 small, thin skinned potatoes, in 1-inch chunks
    3/4 tsp. dry oregano
    3/4 tsp. dry cumin
    3/4 c. dry white wine
    1/2 c. raisins
    1/2 c. pitted black olives
    1 c. frozen peas
Preparation
    Simmer chicken in oil 15 minutes. Remove. To pan, add garlic, onion and green pepper.
    Cook
    4 minutes. Add tomato sauce, potatoes, spices, wine, raisins and olives.
    Add chicken. Simmer about 35 minutes (until done). Stir in frozen peas. Cook until peas are done (2 to 3 minutes).
