Georgia Caviar - cooking recipe

Ingredients
    1 lb. dried black-eyed peas
    2 qt. water
    2 c. Zesty Italian dressing
    2 c. diced green pepper
    1 1/2 c. finely chopped onion
    1/2 c. diced jalapeno pepper
    1 (2 oz.) jar sliced pimiento, drained
    1 Tbsp. minced garlic
    pepper to taste
    tortilla chips
Preparation
    Peel outer skin off large Vidalia onion.
    Cut onion from top into 8 to 16 sections being sure not to cut all the way through root end.
