Champagne Chicken - cooking recipe

Ingredients
    3 whole chicken breasts, boned, skinned and cut in half
    4 Tbsp. butter
    1 Tbsp. vegetable oil
    juice of 1 lemon
    salt and pepper to taste
    1 tsp. thyme
    1/2 c. shallots, finely chopped
    2 c. fresh mushrooms, thinly sliced
    1/2 c. champagne
    1/2 c. chicken broth, double strength
    2 Tbsp. parsley, finely chopped
    1 tsp. flour mixed with 1 tsp. butter
    1 c. green grapes, sliced (optional)
Preparation
    Sprinkle chicken with lemon juice and thyme and let marinate for 5 minutes.
    Then season with salt and pepper.
