Tofu Mushroom Loaf - cooking recipe

Ingredients
    1/2 onion, chopped
    2 Tbsp. oil
    1 c. mushrooms
    2 cloves garlic, minced
    1 block tofu, crumbled
    1/4 c. chopped green chilies
    1 tsp. salt
    2 Tbsp. soy sauce
    2 Tbsp. oil
    2 eggs, slightly beaten
    1 c. whole wheat bread crumbs
Preparation
    Saute onion, garlic and mushrooms in oil.
    In large bowl, mix remaining ingredients.
    Add the onion-mushroom mixture to the tofu mixture.
    Fold gently and spoon into oiled loaf pan.
    Top with 1/2 cup grated Monterey Jack cheese.
    Bake at 350\u00b0 for 30 minutes. Serves 6.
