Virginia Carrot Pineapple Cake - cooking recipe

Ingredients
    1 1/2 c. flour
    1 c. sugar
    1 tsp. baking powder
    1 tsp. soda
    1 tsp. cinnamon
    1/2 tsp. salt
    2/3 c. oil
    2 eggs
    1 c. shredded carrots
    1/2 c. crushed pineapple (with juice)
    1 tsp. vanilla
    raisins, chopped nuts and coconut (if preferred)
Preparation
    Combine all ingredients until moistened. Bake in oven at 350\u00b0 for about 30 minutes.
    May use a 9 x 9 x 2-inch pan or a 10 x 2-inch round pan. Frost with Cream Cheese Frosting when cooled.
