Italian Braised Beef - cooking recipe

Ingredients
    4 lb. rump roast of beef
    1/4 lb. deli ham
    5 strips bacon
    3 cloves chopped garlic
    2 stalks chopped celery
    2 thinly sliced carrots
    1 c. white wine
    1 c. red wine
    1 Tbsp. fresh rosemary
    1/4 tsp. dried oregano
    1/4 tsp. dried basil
    salt and pepper
Preparation
    Line a large Dutch oven with the strips of bacon.
    Add the roast and brown on all sides over high heat.
    Add the remaining ingredients; cover tightly and cook over low heat for 3 1/2 hours or until tender, turning occasionally.
    Serve roast with the pot liquor and buttered pasta.
    Makes 6 to 8 servings.
