Creamy Mandarin Salad - cooking recipe

Ingredients
    3 c. rice, cooked and cooled
    1 (16 oz.) can Mandarin orange segments, drained
    1/2 c. red or green pepper, diced
    1 1/2 c. celery, thinly sliced
    3/4 c. sour cream
    1 Tbsp. lemon juice
    salt and pepper to taste
    chow mein noodles
Preparation
    Cook rice according to package directions.
    Set aside to cool. Blend all ingredients and chill at least two hours.
    Serve on spinach or romaine lettuce.
    Top with chow mein noodles.
