Lobster In Chafing Dish - cooking recipe
Ingredients

2 to 3 small lobster tails, boiled and cut in small pieces
3 Tbsp. butter
1 can sliced mushroom caps
1 Tbsp. flour
1/2 pt. heavy cream
1 can shrimp, drained and cut in small pieces
salt, black pepper and nutmeg to taste
1/3 c. sherry wine
1 Tbsp. Parmesan cheese
2 egg yolks, beaten
Preparation

Melt 3 tablespoons butter in pan; saute lobster and mushrooms for 5 minutes.
Sprinkle in flour and stir.
Add cream and shrimp. Season with salt, pepper, nutmeg, sherry and cheese.
Add egg yolks slowly.
Place in chafing dish and allow to thicken.
If necessary, can be thinned with cream.
Serve on Melba toast rounds.
