Potato Pinwheels - cooking recipe

Ingredients
    1 medium sized potato
    chunky style peanut butter
    2 1/2 to 3 1/2 c. powdered sugar
Preparation
    Boil potato until done (no salt).
    Let cool enough to handle, then peel.
    While still hot, mash thoroughly.
    Begin adding powdered sugar in small amounts at a time until the potato and powdered sugar mixture is at a rolled dough stage.
    Roll out to 1/4-inch thickness.
    Spread with peanut butter and roll up like a jelly roll.
    Chill for 5 to 6 hours.
    Slice into 1/4 to 1/2-inch pieces.
    Serve cold.
