Baked Acorn Squash With Crisp Onions - cooking recipe
Ingredients

2 large acorn squash
3 Tbsp. butter
3/4 tsp. curry powder
3/4 tsp. salt
3/4 tsp. pepper
1/4 c. sliced almonds
1/2 c. vegetable oil
3/4 lb. onions, thinly sliced
Preparation

Preheat oven to 375\u00b0.
With large chef's knife, quarter squash lengthwise.
With spoon, scoop out and discard seeds.
Halve squash into pieces, lengthwise.
Place, skin side down, in jelly roll pan.
In small bowl, combine butter, curry powder, salt and pepper.
Mix well.
With pastry brush, spread mixture evenly over inside of squash.
Sprinkle with almond slices and bake 45 minutes, until tender when tested with tip of paring knife.
In large skillet, saute onions.
Spread onions on squash.
