Club Chicken Casserole - cooking recipe
Ingredients

1/4 c. butter or margarine
1/4 c. all-purpose flour
14 1/2 oz. evaporated milk
1 c. chicken broth
1/2 c. water
3 c. long grain rice, cooked
2 1/2 c. cooked, diced chicken
1 (3 oz.) can sliced mushrooms, drained
1/3 c. chopped pimentos
1 1/2 tsp. salt
Preparation

Melt margarine in large saucepan.
Blend in flour.
Add evaporated milk, chicken broth and water.
Cook quickly, stirring constantly until mixture thickens and bubbles.
Add rice, chicken and remaining ingredients.
Mix well and pour into greased 2-quart casserole and bake at 350\u00b0 for 40 minutes or until heated through completely.
If desired, top with 1/4 cup slivered almonds. Serves 8 to 10.
