Hot And Sour Soup - cooking recipe

Ingredients
    4 (14 1/2 oz.) cans chicken broth
    2 Tbsp. rice vinegar
    1 Tbsp. soy sauce
    1 tsp. sugar
    1/4 tsp. minced, fresh ginger
    1/8 tsp. ground red pepper
    1 lb. crab flavored surimi (imitation crab)
    1 (8 oz.) can bamboo shoots, drained
    1/2 c. chopped shitake mushrooms
    1/4 c. sliced scallions
Preparation
    Combine first 6 ingredients in a Dutch oven.
    Bring to boil; cover and simmer for 10 minutes or low heat.
    Add surimi, bamboo shoots and mushrooms.
    Simmer until heated through.
    Sprinkle with scallions.
