Vegetable-Cheese Soup - cooking recipe

Ingredients
    1 onion
    1 green pepper
    2 Tbsp. butter
    3 Tbsp. flour
    3 c. milk
    1 (10 oz.) pkg. frozen peas and carrots
    1 (10 oz.) pkg. Cheddar cheese
Preparation
    In a medium saucepan, melt butter and saute chopped onion and green pepper until tender.
    Stir in flour.
    Cook 1 minute.
    Add milk and bring just to boiling.
    Add frozen vegetables; reduce heat.
    Simmer, covered, for 20 minutes.
    Gradually stir in grated cheese until melted.
    Season with salt and pepper.
