Italian Chicken(Method: Foil Dinner) - cooking recipe

Ingredients
    1 1/2 c. uncooked rice (not instant)
    8 chicken leg quarters
    2 tsp. salt, divided
    2 (6 to 8 oz.) cans skinned mushrooms
    4 medium zucchini, sliced
    2 green peppers, cut in strips
    2 medium onions, thinly sliced
    2 (15 oz.) cans tomato sauce
    1 tsp. oregano
    1 tsp. basil
    Parmesan cheese
Preparation
    Place 3 tablespoons rice in center of each 8 (12-inch) squares of heavy-duty aluminum foil.
    Sprinkle chicken on both sides with 1/2 teaspoon salt and place on rice.
    Drain mushrooms; reserve 1/2 cup liquid.
    Divide mushrooms, zucchini, green peppers and onions into 8 equal portions.
    Place one portion over each chicken quarter.
    In large bowl, mix together the tomato sauce, 1/2 cup mushroom liquid, oregano and basil; spoon over vegetables and chicken.
    Fold foil, using drugstore wrap method.
    Be sure seals are tight.
    Bake in coals for approximately 1 hour.
    When chicken is cooked through, open foil packets, sprinkle with Parmesan cheese and serve.
