Poor Boy'S Strawberry Shortcake - cooking recipe

Ingredients

1/2 c. shortening
3 c. packaged buttermilk pancake mix
1 egg, beaten
2 (8 oz.) cartons strawberry yogurt
1/3 c. packed brown sugar
1/3 c. milk
1 (4 oz.) container frozen whipped dessert topping, thawed

Preparation

Grease lightly and flour 2 (8 x 1 1/2-inch) round baking pans. Set aside.
In large mixing bowl, cut shortening into pancake mix until mixture resembles coarse crumbs.
Combine eggs, 1 carton of yogurt, brown sugar and milk.
Add to dry ingredients, stirring until moistened.
Turn mixture into prepared pans.
Bake in 375\u00b0 oven for 25 minutes or until done.
Cool 10 minutes on wire racks.
