Salmon Souffle - cooking recipe

Ingredients
    2 c. soft bread crumbs
    1 c. scalded milk
    1 tsp. salt
    1/2 tsp. dry mustard
    1/4 lb. sharp cheese
    3 eggs
    1 lb. flaked canned salmon
Preparation
    Soak soft bread crumbs in scalded milk.
    Add salt, dry mustard and cheese.
    Mix until cheese is melted.
    Let cool as you clean salmon; remove skin and bones.
    Add egg yolks.
    Fold in 2 cups flaked salmon (1 pound).
    Fold in 3 egg whites, beaten stiff.
