Tomato Sauce - cooking recipe

Ingredients
    8 lb. tomatoes
    1 c. chopped green pepper
    1 medium onion, chopped
    1 tsp. celery seed
    1/4 tsp. cayenne
    2 Tbsp. vinegar
    1 Tbsp. sugar
    1 tsp. salt
Preparation
    Wash, remove stem
    ends and cores and quarter tomatoes. Let tomatoes stand in colander to drain off excess liquid.
    In 8 to 10 quart kettle, combine first 5 ingredients.
    Bring to a boil;
    cook 30
    to
    40
    minutes,
    stirring occasionally.
    Put tomato
    mixture through strainer.
    Add vinegar, sugar and salt to
    tomato
    puree. Return
    to
    kettle.
    Bring
    to
    a boil and simmer
    until
    desired consistency, about 30 minutes, stirring often.
    Pour
    hot tomato sauce into hot jars, leaving 1/2-inch space
    and
    seal
    (boiling water bath - 10 minutes).
    Makes 2 pints.
