Southwestern Muffins - cooking recipe

Ingredients
    1/2 c. sweet red pepper, finely chopped
    1/2 c. sweet yellow pepper, finely chopped
    1/4 c. onion, finely chopped
    2 Tbsp. vegetable oil
    3/4 c. cooked ham, diced
    1 1/2 c. cornmeal
    1 c. flour
    1 Tbsp. baking powder
    1 tsp. salt
    1/4 c. sugar
    2 eggs, beaten
    1 c. milk
    1/2 c. whipping cream
    1/4 c. vegetable oil
    1/4 c. butter or margarine, melted
Preparation
    Saute peppers and onion in 2 tablespoons oil until tender; stir in ham.
    Combine dry ingredients in a large bowl; make well in center.
    Combine remaining ingredients; add to dry mixture with the peppers and ham.
    Mix until just moistened.
    Spoon into greased muffin tins, filling 2/3 full.
    Bake in preheated 425\u00b0 oven for 15 to 20 minutes or until golden brown.
    Remove from pan immediately.
