Lentil Skillet Supper - cooking recipe

Ingredients
    1 Tbsp. oil
    1/2 c. thinly sliced carrot
    1/2 c. dry lentils, rinsed
    1/2 c. sliced green onions
    2 1/4 c. chicken broth
    1/2 c. regular brown rice
    4 oz. (1 c.) shredded Cheddar cheese
Preparation
    Heat oil in large skillet over medium-high heat.
    Add carrot, lentil and onion; cook, stirring constantly, for 3 to 4 minutes. Add broth and rice; bring to a boil.
    Reduce heat to low.
    Cover and simmer for 30 to 40 minutes, until liquid is absorbed.
    Fluff with fork.
    Remove from heat and sprinkle with cheese.
    Cover; let stand 1 to 2 minutes or until cheese is melted.
    Makes four 1-cup servings.
