Cream Of Potato Soup - cooking recipe

Ingredients
    2 Tbsp. plus 2 tsp. butter or margarine
    4 Tbsp. all-purpose flour
    4 c. milk
    2 c. diced, cooked potatoes
    salt and pepper to taste
Preparation
    Melt butter in a heavy saucepan over low heat.
    Add flour and stir until smooth.
    Cook for 1 minute, stirring constantly. Gradually add the milk.
    Cook over medium heat, stirring until thick and bubbly.
    Stir in the potatoes, salt and pepper.
    Cook for 5 minutes or until all ingredients are thoroughly heated.
