Albondigas Soup - cooking recipe
Ingredients

1 lb. ground beef
1/4 c. long grain rice
1 egg
1 Tbsp. chopped fresh cilantro
1 tsp. seasoned salt
1/4 c. ice water
2 (14 1/2 oz.) cans chicken broth
1 (14 1/2 oz.) can whole peeled tomatoes (undrained), cut up
1/4 c. chopped onions
1 rib celery, diced
1 large carrot, diced
1 medium potato, diced
1/4 tsp. garlic powder with parsley
Preparation

In medium bowl, combine ground beef, rice, egg, cilantro, seasoned salt and ice water. From into small meatballs. In a large saucepan, combine broth with vegetables and garlic powder with parsley. Bring to a boil. Add meatballs. Reduce heat. Cover and simmer 30 to 40 minutes, stirring occasionally. Makes 6 to 8 servings.
