Ingredients

3/4 c. flour
1 c. cornmeal
2 Tbsp. sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cumin
1/2 tsp. chili powder
1/4 c. pimento
1 c. plain yogurt
1 egg
3 Tbsp. oil
3 Tbsp. scallions
Preparation

Heat oven to 400\u00b0.
Combine dry ingredients and pimento.
Mix yogurt, egg, oil and scallions.
Mix with dry ingredients, just until combined.
Put into 8-inch iron skillet.
Bake 20 to 25 minutes until done.
Can be done over campfire, if done carefully.
