1 Tbsp. minced garlic
1 Tbsp. minced ginger
1 c. chopped onions
3 to 4 dried red chili peppers*
1 tsp. turmeric
1/2 tsp. fennel seed
1/4 tsp. ground cardamon
1 lb. zucchini, cut into 1/2-inch dices
4 tomatoes, peeled and cut into 1/2-inch dices
1 c. coconut milk
1 1/2 tsp. salt
2 Tbsp. minced scallions
1 Tbsp. fresh cilantro*
