George Strait'S King Ranch Chicken - cooking recipe

Ingredients
    1 (10 3/4 oz.) can cream of chicken soup
    1 (10 3/4 oz.) can cream of mushroom soup
    3/4 c. chicken broth
    1/2 (10 oz.) can Ro-Tel tomatoes with green chile peppers
    4 chicken breast halves, boned and skinned
    1 (11 oz.) pkg. corn tortillas, cut into 6 pieces
    1 medium onion, chopped
    1/2 lb. Cheddar cheese, shredded
    1 lb. dried red kidney beans
    6 c. water
    2 medium onions, chopped
    2 ribs celery with leaves, chopped
    1/2 green bell pepper, chopped
    2 garlic cloves, crushed
    ham bone or bacon drippings (if available)
    1 lb. or more large smoked link sausage, sliced
    optional seasonings: salt, freshly ground pepper, fresh garlic, cayenne pepper, bay leaves, thyme and/or oregano
    optional toppings: chopped green onion, jalapeno slices, grated sharp Cheddar cheese and liquid hot sauce
Preparation
    Soak beans in water overnight or by the short soak method: Cover beans with water, ring to a boil, reduce heat and simmer 2 minutes, turn off heat, cover and let stand 1 hour.
