Passover Vegetable Loaf * - cooking recipe

Ingredients
    1 large onion, diced
    4 Tbsp. oil
    8 stalks celery, diced
    2 medium carrots, shredded
    1 medium green pepper, diced
    1 can string beans, drained and chopped
    2/3 c. mushrooms, sliced
    2 tsp. salt
    1/2 tsp. pepper
    1/2 c. matzo meal
    2 eggs, beaten or 1 egg and 2 egg whites
Preparation
    Saute onion in oil until transparent.
    Add celery, carrots and green pepper.
    Saute until tender-crisp.
    Remove from heat and combine with remaining ingredients. Pour into a greased loaf pan. Bake at 350\u00b0 for 1 hour.
    Serves 6.
