Hot Creamed Potato Salad - cooking recipe

Ingredients
    4 slices bacon
    2 Tbsp. butter
    1 c. thinly sliced celery
    1/4 c. sliced green onion
    2 Tbsp. flour
    2 Tbsp. sugar
    2 tsp. salt
    1 tsp. paprika
    1 tsp. dry mustard
    1/4 tsp. pepper
    1 c. milk
    1/4 c. vinegar
    4 c. sliced, cooked potatoes
    1/2 c. diced green pepper
    1/2 c. dairy sour cream
Preparation
    Cook bacon, drain, crumble and set aside.
    Melt butter in large skillet; add celery and onion and saute until tender. Combine flour, sugar, salt, pepper, paprika, mustard and milk; stir into celery mixture.
    Cook stirring constantly until thickened.
    Stir in vinegar.
    Add potatoes and green pepper; stir carefully to coat with dressing.
    Heat thoroughly.
    Just before serving, stir in sour cream and sprinkle with bacon.
    Makes 6 servings.
